Michael Pollan's newest book is Cooked: A Natural History of Transformation, in which he describes "how he learned to grill with fire, cook with liquid, bake bread, and ferment everything from cheese to beer. In the course of his journey, he discovers that the cook occupies a special place in the world, standing squarely between nature and culture. Both realms are transformed by cooking, and so, in the process, is the cook." From his website: michaelpollan.com/.

At Hardwick Beef, we provide the very best beef from animals that are raised on grass, without any antibiotics or added hormones. There is an increasing demand for safe and healthy food, and a demand for an ability to track a cow from birth onward. With mad cow disease an ever growing concern, consumers want to know if their food is safe.

We are promoting a return to grass farming. As animals are moved from one fresh paddock to another, grass is continually being grazed when the vitamins, minerals, and proteins are at their best. Consequently, cattle get the best possible nutrition, manure is spread evenly across the land, and the farmland actually improves with use.

Testimonial

Not only do I love great beef, but I know what great beef really is. In fact, I would rather eat bees than buy chain supermarket meat. Having lived in Argentina, where they are known--and deservedly so for their properly fed and raised beef--I was knocked out by your amazing beef. Stopping at the Brattleboro Co-op, I looked through the meat section hoping that something would inspire me. ... there were your New York strip steaks, marbled better than a Bernini sculpture. The test of course was the hardwood grill. Magnificent! Your beef is the best I have tasted in many years here. Kudos! -- Customer Testimonial
